Hearty Chicken & Mushroom Pie

Warm and comforting, this chicken pie is a delicious winter meal for the whole family.
Delicate Korma Curry

  • 1 packet of The Spice Tailor Delicate Korma Curry
  • 1 tbs. each butter and vegetable oil
  • 2 medium slices white bread, crumbed
  • 200g chestnut and shiitake mushrooms, cleaned and halved or quartered if large
  • 1 packet ready-rolled puff pastry
  • 250g chicken skinned thighs fillets
  • 200ml chicken stock
  • 2 small spring onions, sliced
  • 1 rounded tsp. flour
  • 1 tbs crème fraîche or double cream
  • Large fistful of chopped coriander leaves
  • Salt and freshly ground black pepper to taste
  • 1 egg, whisked in a small bowl to wash
    1. Add to the sauces along with the chicken, powdered spices, grated cheese and a little extra seasoning. Marinate for as long as possible, covered for a few hours in the fridge would be good. Bring back to room temperature before continuing.
