Chicken, Pepper and Onion Masala

This is a really flavoursome Indian dish, chunky but silky at the same time. The flavours and textures of the peppers and red onions really add to the dish and is reminiscent of a karahi dish but with the creaminess of a tikka masala. Best with hot naan and a raita. Can be made with chicken or turkey.

Ingredients
  • 1 pack of The Spice Tailor Original Tikka Masala
  • 1 tsp vegetable oil
  • 4 medium chicken thigh fillets or medium turkey thigh fillets, cut into largish pieces
  • 1 green bell pepper, cut into 2cm squares
  • 1 small red onion, cut into chunky 2cm squares
  • Handful of fresh cilantro, chopped
Method
  1. Heat the oil in a medium-sized pan, add the spices from the whole spice sachet and sizzle for 20-30 seconds.
  2. Add the chicken or turkey and brown gently. Add the bell peppers and onions, season lightly and sauté for 1-2 minutes. Add both sauces from the pouches and a splash of water and bring to a simmer.
  3. Cook until the chicken or turkey is cooked through, around 5-6 minutes. Taste and adjust the seasoning, stir in the chopped cilantro and serve.
