Healthy Food Guide - Anjum is the 'Seasonal Expert'

Featured in March's addition of the Healthy Food Guide, Anjum is the 'Seasonal Expert' on spinach and has some great ideas of how she uses this vegetable in her everyday cooking.

SPINACH

'I add spinach to everything! I like to have greens every day and spinach is really quick and easy to cook so I put a handful in salad, stews, soups and pots of lentils and chickpeas. it has a mild bitterness, which works well sauteed with garlic, onion, a little cummin and garam masala. Squeeze a little lemon juice on top and sweet, sour, salty and bitter flavours all come together harmoniously. There's a great Indian recipe for using up leftover rice that I love. Mush together shredded spinach, rice, gram flour(chickpea flour), cumin and a little salt. Make the mixture into little balls, steam them and serve with Greek yogurt for a super-healty light lunch.'
